This hands on class is for anyone who has wanted to try decorating a cake – it really is easier than you think.

Everything is provided on the day. You need no prior experience in cake decorating for this class.

This is suitable for ages 14 and above.

The cake will be round as this is the easiest shape to learn. The cake will be a chocolate mud cake and you will learn how to layer ganache and cover the cake with rolled fondant.

The cake will be displayed on a fondant covered board.

As time is limited on the day a neutral design will be completed that will be suitable for any celebration in the colour scheme of your choice.

It is a full day starting sharply at 9.30am and finishing at 4.30pm. Everything is provided including class notes and light snacks. Please wear comfortable shoes as you will be on your feet the entire day and they need to be closed in. Hair needs to be tied up and no jewellery to be worn.

The price is $300.00 gst included and numbers are strictly limited. Positions are held only with a non refundable 50% deposit and the balance is payable in full before the class date. Minimum numbers are needed for the class to be held. If these are not reached then deposits will be refunded.

How to make 3d ball cakes class at Inspired by Michelle Cake Designs. Hands on class to learn how to sculpt a 3d ball cake starting from square cakes.

I’m often asked how I make my 3D ball cakes so in this hands on class you will learn how I take square cakes and turn them into 3D balls but I must add I usually have my fingers crossed at the same time!!

3D ball cakes can be used for so many designs and in this class different ideas will be explained especially the soccer / football but because of timing we will be finishing it in a celebration bomb design in colours of your choice. This is wonderful for 21st birthdays, mens cakes which are often hard to design for and as it is close to Valentines day maybe a LOVE bomb!!

I think this three day Decorating Details class is going to cover just about every aspect of decorating finishes.

You will be working on a three tier dummy cake (both round and square tiers) so you will be able to keep the cake for reference.

Areas covered will include -

* quilting – quick and easy method for both square and diamond quilting. See how easy it is to quilt both round and square cakes with no fancy tools and see how it will look before you quilt the actual cake. Various ways of finishing the quilt pattern.

* stenciling the fear demystified and learn how to cut your own stencils and how they can be used for embossing.

* piping details a decorative design, borders and perfect dots.  How to make royal icing and the consistency needed for both details and borders.

* Learn how to plan a design and transfer this to a cake using different methods.

* brush embroidery a design to learn the consistency of royal icing needed for this effect.

* shimmering a cake surface to achieve a beautiful strong shimmer effect.

* how to make those beautiful lace panels without any expensive moulds and cutters. This means you can easily add a brides lace as a detail on her wedding cake or make the very popular vintage style designs.

* making wired hydrangea flowers – just a few to learn the technique.

A wonderful two day class where you will learn how to make sugar gumpaste roses in various colour shades with matching buds and leaves.

No previous experience needed to attend this class – I promise these really are easy!!

I love using a big single rose to decorate a top tier sometimes it is all that is needed to make an elegant statement and not only for wedding cakes. Being practical it is also a lot easier to make one big rose than a dozen roses to fill a top tier and when they are made well they really do look spectacular!!

In this class you will learn a simple technique to assemble large roses, veining, shading roses and leaves, wiring rose leaves and a simple rose bouquet.

This class is all about roses, you will complete five large roses with matching buds and leaves. Doing this many roses means by the end of the two days the technique will be firmly imprinted in your mind!!

Two day class where you will learn how to construct a bird cage cake no matter how many guests the cake needs to serve.

Bird cage cakes are so popular with good reason – they look spectacular. They easily match the reception decor, invitations and are the perfect design for an outdoor event.

Learn how to set up what is essentially a three tier cake with a centre pole so that it is stable and easily transported. Ganache a cake to result in a smooth finish and shaping the top give the dome of the cage.

This class also teaches you how to wrap a cake like the double height/barrel cakes that are very popular.

This is a discussion class on how to design your cakes effectively. How to take a clients requirements and create a design that fills their needs but also be practical for you to make. Learn how to simplify design and work with colour. Learn how to be clever in your designs. Bring all your questions with you and these can be used as examples for discussion. See from examples a clients request and the resulting design.

This is a 2 1/2 hour class and will start at 9.30 am and finish at 12 noon. The price is $100.00 gst included and numbers are strictly limited. Take this afternoon to learn how to pipe with royal icing – it really is not as hard as you think and is way way way faster than cut out letters.

Learn how to make royal icing to the right consistency, how to make piping bags and the correct way to hold the bag when piping.

Simple lettering styles will be practiced and practice cards used can be taken home.

Learn pressure techniques, how to copy clients typeface from their invitations so their themes can be carried through to their cakes.

Join this class to learn two methods of covering a double height cake tier. One method we will be using in the class and the other will be demonstrated.

Discussion on how best to design a double barrel tier to make life easier and the internal structure to produce a stable and easily served cake.

We will also be making a sugar anemone flower. This is a wired petal flower which looks amazing in any colour variation.

For this class we will be using foam tiers so you will be able to keep this cake as a show cake. It can also be completed in any colour combination you wish – maybe to match your business colours etc.

HI Lena, good question. With the one day class there just isn’t time for a lunch break so I have found it is much easier and logical to have healthy snacks that can be eaten throughout the day. Hi Michelle,
I am from Christchurch, New Zealand and was wondering if you have planned any courses for towards the end of this year, and if so what would the training location be (this would be so I wouldn’t book accommodation on the opposite side of Sydney).
I did notice by previous comments that you are coming to NZ in March! Would you be coming anywhere near christchurch (although I would fly to another location if you would teach and have arranged a training premise)
I would be interested in the decorating details class and The White Collection.

Hi Olivia, thank you for your interest!! Yes I will be in NZ but it is now April for a week and I’m flying into Auckland. It is for a mini holiday and a look around I do not have any plans to teach. I am hoping to teach there but at this stage I really do not know how to make it happen. Yes I will more than likely be teaching in Sydney at the other end of this year and it will be in my studio which is located in Baulkham Hills (easy access from both Parramatta and Sydney city). Hopefully we will meet this year, thank you for asking.

Hi Michelle the only experience you need for this class is to be able to cover a cake as we need to do this fairly quickly so that we can get it out of the way. The emphasis is on decorating and really I will be showing you how easy it is to achieve these finishes. Hi Thea, March and April have filled with private tuition and cakes the next classes are in May. Private tuition is $800.00 / day for one student or $900.00 / day for two students maximum two students. The day is from 9.30am finishing 3.30pm and can cover anything you wish. Hi Priscilla, yes I made it to Melbourne but ran out of time to do anything about cakes. I have students that fly in to do classes and they either stay in the city or Parramatta. Both are just a single bus ride to my studio with a bus stop at my door so very easy. Parramatta is closer but if you have not been to Sydney before it is nice to stay there and do some sightseeing. The class is for anyone who has wanted to try decorating a cake – it really is easier than you think.
Everything is provided on the day. You need no prior experience in cake decorating for this class.
This is suitable for ages 14 and above.
The cake will be round as this is the easiest shape to learn. The cake will be a chocolate mud cake and you will learn how to layer ganache and cover the cake with rolled fondant.
The cake will be displayed on a fondant covered board.
As time is limited on the day a neutral design will be completed that will be suitable for any celebration in the colour scheme of your choice. We will make a fondant teddy bear to sit on the top.
It is a full day starting sharply at 9.30am and finishing at 4.30pm. Everything is provided including class notes and light snacks. Please wear comfortable shoes as you will be on your feet the entire day and they need to be closed in. Hair needs to be tied up and no jewellery to be worn.
The price is $300.00 gst included and numbers are strictly limited. Positions are held only with a non refundable 50% deposit and the balance is payable in full before the class date. Minimum numbers are needed for the class to be held. If these are not reached then deposits will be refunded.
